Today I decided to make homemade Blueberry Pierogies (Polish) which are absolutely delicious! I will share with you the full recipe and all the pictures I took today for this post. Here are the main ingredients which you will need.
Step 1: Measure 4 cups of all purpose flour into a bowl, add 2 tea spoons of salt.
Then in a separate bowl crack 2 whole eggs & then another egg yolk, 2 cups of sour cream, 2 table spoons of Butter & 2 table spoons of vegetable oil then whisk well until there are no lumps.
Step 2: Add the wet mix to the dry mix.
Step 3: Mix it all together well and then begin to knead the dough your hands on the table.
Once the dough is ready and looks like this
Step 4: Using a rolling pin roll the dough out
keep rolling until it is about 1/8" thick then using a glass or a cooker cutter begin to cut out circles like so.
Once you have cut all the circles out, you will have some dough left over.... use the rolling pin to re roll this out and repeat the process until you have used all the dough.
Step 5: Wash all the blueberries and place them in a separate bowl. Also pour some sugar in a separate bowl.
Step 6: Brush a little bit of water around the edge of each of the circular pieces & then
Add 1 tea spoon of blueberries to each piece in the middle and sprinkle a pinch of sugar too over them too.
Step 7: Roll each piece in half and then squeeze the ends tightly with your thumbs so that there are no gaps.
Then with a fork press the tip of the fork on the tips of the Pierogi to create the pattern as shown here
Step 8: Begin to boil a large pot of water. Then add a few Pierogies into the boiling water
When the Pierogies float to the top of the water take them out and place them on to a tray with kitchen tissue to soak up excess water.
Step: 9 Spray a little oil on to a frying pan and add a few pierogies and keep turning them until they are lightly brown on both sides. Then once they a lightly brown take them off and on to a plate.
Step 10: Sprinkle some casting sugar over the pierogies and add some blueberries on top.
Also add some sour cream, double cream or anything else which you prefer on top.
Tip: After step 9 if you place the pierogies in the oven on a baking tray gas mark 8 until they go lightly more brown and crispy is also very nice :)
