This is a recipe created exclusively for Steemit Culinary Challenge # 11!!
This recipe was invented during the burger confection only with this in mind "What kind of flavors I would like to taste?".
It was prepared carefully, without any rush...and the result in terms of flavor exceeded my expectations! I'm so proud this time! My boyfriend said it was his best burger EVER!!
This SCC has a clear rule: NO CHEESE!
I found this one hard, that's why I tried to compensate that absence adding other kinds of flavors to the burger.
Ingredients
The ingredients were bought from local producers.
Burger
- 3 fresh cow beef burgers (100-150g each)
- 5 garlic cloves
- 1 bay leaf
- 1/2 small glass of white wine
- olive oil, salt and black pepper (to taste)
Onions
- 2 medium onions
- 1 tablespoon of mustard
- olive oil, salt and white pepper (to taste)
Mushrooms
- 7 small mushrooms
- small bunch of coriander
- 1/2 small glass of white wine
- salt (to taste)
Preparation
Onions
- Unpeel the onions and cut into 0,3-0,5 cm slices. Add it to a frying pan covered with olive oil. Season with salt and black pepper, and let it cook a bit in a low-medium fire. After 5 minutes, add the mustard, stir again, and let it cook another 5 minutes. (Don't let it burn!)
Meanwhile...a salad must be prepared
- I had this amazing spinach and cherry tomatoes that I quickly transformed in a beautiful salad!! I add purple onion slices and seasoned it with olive oil, vinegar, salt with herbs and oregano.
Burger
- Wash the garlic cloves and smash it. In a frying pan add the olive oil, the garlic, and the bay leaf. Let it fry for 1-2 minutes, just to add the garlic flavor to the olive oil.
- Add the burgers and season with salt and black pepper. Let it fry for about 2-3 and add the white wine (third photo). Let it fry more 4-5 minutes and turn them (I liked them well done).
- When cooked, take them to a plate to rest the meat. Remove the bay leaf, you will need this frying pan again!
Mushrooms
- Wash and slice the mushrooms. Wash the coriander too. (This part wasn't planned, but I have the luck to have some in my balcony)
- Add the mushrooms and the coriander to the frying pan and stir for a while. Add the white wine, let it cook for 1 minute. Turn to a low-medium fire and let it cook for about 5-10 minutes.
Bread preparation
Personally, I don't like burger buns, I rather prefer our portuguese traditional wheat bread. I bought these ones in the morning, so they are (were) amazingly fresh!
- Cut the bread in half and warm it in the frying pan (yes, again!! You won't regret as it gets some of the flavor left in the pan)
Burger final preparation
Order: bread, "paio do lombo" (a traditional smoked meat), burger, onion, mushrooms and bread!
It's ready!!
Now it's just time to add the salad and some chips...and let's go eat it as fast as possible!!
I served this burger with a cold beer! Perfect!!

I was happy with the final result, but for the first time on my "Steemit cooking posts", I didn't assure I had enough photos of the final presentation. I just wanted to eat the burger!! Sorry for that, not a very "professional" thing ;)

Though this is your 2nd entry your post - still is very well made with clear pics, a clear walk through and most of all a very nice presentation. That's dedication reflected on the article, I have to say thank you for taking this challenge seriously!
Yes, it's tough not having the cheese - that's the challenge for this one - I use it as a binder for the patty sometimes so its tough not having it specially on a meat burger like this.
