STEEMIT SANDWICH CONTEST WEEK #5 - CHICKEN, PLANTAIN, AND MANY VEGGIE QUESADILLA

Crispy on the outside, cheesy, and loaded with veggies and protein on the inside.

That's how I like my quesadillas.

These quesadillas are so good, you'll never know that you are eating loads of veggies, protein, and fiber.

Ingredients

  • Multigrain tortillas
  • Cheddar cheese
  • Chicken
  • Chopped spinach
  • Shredded carrots
  • Ripe plantains
  • Black Beans
  • Cumin
  • Salt
  • Olive oil

Steps

  • Over medium heat, saute the carrots, beans, spinach, and chicken with cumin and salt for about 5-7 minutes until heated through.

  • Over medium heat, saute the plantains with olive oil and salt until they are cooked through.

Assembly

  • Sprinkle the cheese onto one tortilla, then add plantains and veggie mixture, top with more cheese, and then another tortilla.
  • In an oiled grill pan, grill the quesadillas on both sides until lightly browned and crispy.

This cheesy quesadilla on multigrain tortillas is so packed with veggies and colors. The smooth sweet plantains and the hearty beans and chicken work together to bring loads of nutrition to you in a delicious grilled package.

A couple of the ingredients don't agree with me..but I love quesadillas nonetheless..and with so many stacked up and perfectly grilled..I'll just close an eye and dig that! :)

Holy cow - A lot of good stuff in here! I have missed plantains tremendously. Thank you for using that as an ingredient and reminding me how delicious they are. They are so underrated. Time to start the trend here @jaymorebeet

Can you get plantains?? I love them - they can be used in so many different ways. (I usually forget about them until they are black, and then use them sweet.)

It makes a great dessert, I think. Yum yum yum. The West Indies in Toronto loves plantains, therefore I know their supermarkets sell them.

yeah salsa of any kind would go great with these! And beer is great with almost everything, so right on!
