In the history story of cooking,African receipe happens to be in contest and its always backed with nurtrious ingredients.
Let's move to the kitchen to display the local skill fixed in me from my granny whenever i pays her visit to the village.
I have the formular for African-salad(abacha). This is one of the most valued dish found in the eastern part of Nigeria,west Africa.
African salad is very nurtrious and appetising.
Condiments:
- sliced cassava(ji akpu or akpu mmiri)
- red oil
- dry fish
- maggi
- grinded crayfish
- grinded nutmeg
- sliced onion
- sliced utazi(flavoured leaf)
- extracted water from burnt palm front/extracted water from potash(ngwu)
- salt
- sliced garden egg
- fish/meat or Canda(animal skin)
These are the ingredients needed for the preparation of this wonderful mouth watery dish.
It takes about 15-20 minutes to prepare the African salad.
Preparation Process:
-Get the fry pan ready to fry ur fish or meat.once done with the fish preparation or frying,you get it down from the fire.
-Fix a pot on fire,add water allow to boil for about 60seconds then add your sliced cassava and allow to boil for about 3 minutes. Seve off the water and allow to cool a bit.
-add the extracted palm front water/extracted potash water to a pot or a small bowl;
-add your red oil,mix it together to get a thicker oil substance.this takes like 2 minutes.
-add your ingredients (grinded nutmeg,grinded crayfish,maggi,onion,pepper,and salt). Mix it together and allow for about 5 minutes.
Get it down from fire and add your fried fish or meat,sliced garden egg and the utazi leaf. Cover it for about 2 minutes.
It is now good to go; I will like you to try this using this procedure,step by step you will definitely appreciate the meal.
