🎶It is part of one of the most significant songs of my childhood. My mother (who in her high school stage studied food preservation) always sang to me and my sister, while cooking with coconut (various sweets, among other delicious foods) this melodious song and with a soft and gentle sound she sang very strong while my sister and I watched her with admiration, asking questions in relation to what she was preparing.

The "WHITE DIAMOND" 💎 could be called this fabulous fruit, since most of its derivatives are extremely expensive. It also has a wide range of uses; mainly in the beauty industry (in fact you could say that more than in the food industry)

Here I will show you STEP BY STEP how to extract the 3 main SUBPRODUCTS.

• Open the coconut. image_303926

•We break and extract the water. (In a next post I will show you divine drinks with this water)

• We separate the shell and meat. Then we proceed to scratch.

• Then the striped meat is pressed in to cloth sieve and from there you obtain the MILK. Besides the coconut already squeezed once, it can be squeezed again but in this second moment with a little warm water; and you'll get less pure but delicious milk.

For the oil, we must use the pure liquid that was squeezed first. It is placed at low heat in a cauldron and slowly beaten until, after a few minutes, the oil begins to separate from the liquid as you can see in these photographs.

The liquid evaporates and part of the fat solidifies, we put the oil in another container. What is left in the cauldron (solid) in my family we eat them almost always in small quantities with sugar type mini balls.
