Street foods: Prawn & Fishcake & Beef Noddle Soup.
Ingredients:
Prawn & Fishcake
-roughly diced fish fillets...solid, firm fish (I used Cod)
-peeled and deveined prawns
-lime leaves, destemmed, finely chopped (I used lime skin)
-Thai red curry paste
-egg white
-sugar
-fish sauce
-sea salt
-vegetable oil for deep frying
-sliced cucumber, to serve
-fresh herbs, basil, cucumber, etc...coriander leaves (whatever to your liking)
Dipping sauce:
-fish sauce, sugar, white vinegar, lime juice, coconut juice, garlic, small red onion, red chilli, all finely chopped.
Beef Noodle
-garlic cloves, peeled, roughly chopped
-coriander roots, cleaned, coarsely chopped
-black peppercorns
-vegetable oil
-beef chuck steak (I used stewing beef)
-star anise
-ginger
-cinnamon stick
-soy sauce
-dark soy sauce
-fish sauce
-sugar
-beef stock
-beef balls (optional)
-Asian greens (e.g. bok choy, pak choy, Chinese young kale)
-rice noodles to serve (or egg noodles)
-bean spout to serve
-Thai basil leaves to serve
