Ingredients:
1 1/2 lbs Mahi-Mahi fillets
1/4 cup olive oil
2 tbsp lime juice
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp ground cumin
1/4 tsp smoked paprika
Salt and pepper to taste
Corn tortillas
Shredded cabbage
Pico de gallo
Sliced avocado
Lime wedges
Cilantro (optional)
Instructions:
Preheat grill to medium-high heat.
In a small bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
Brush both sides of the Mahi-Mahi fillets with the marinade.
Place the fillets on the grill and cook for about 4-5 minutes per side or until cooked through.
Once the fish is cooked, remove it from the grill and let it rest for a few minutes before flaking it into bite-sized pieces.
Warm the corn tortillas on the grill for about 30 seconds on each side.
Assemble the tacos by placing some shredded cabbage, flaked Mahi-Mahi, pico de gallo, and sliced avocado on each tortilla.
Garnish with cilantro and a squeeze of lime juice, if desired.
