So yesterday afternoon I was thinking of what to cook since it has been raining lately.
Weeks ago I got this frozen oxtail cuts from AEON Big and thought of boiling soup.
And then suddenly I have that craving to come up with a one pot oxtail stew.
Since oxtail meat can be tough to cook, I decided to cook it in my slow cooker for an hour and 45 minutes. If you don’t have a slow cooker, you may use the stove but with slow fire. Make sure to keep watch on the boiling broth so you don’t burn the contents or is left with dry gravy.
Here are the ingredients:
1 packet of oxtail cuts (leave a little bit of fats behind, fats will moisten and tenderise the meat. You may remove them when you scoop them out onto your plate)
2 potatoes – cubed
2 carrots – cubed
2 stalks celery – chop (you can add green peas if you like)
Half a yellow onion – use half only
2 pieces of Bay Leaf
Black pepper, salt, brown sugar to taste
Half a teaspoon of balsamic vinegar
1 table spoon of corn starch flour
To prepare:
Chop/cubed/clean all the raw ingredients above
Put into the pot (put in carrots first and then meat, potatoes, onion, celery, grean peas, bay leaf then pepper, salt, brown sugar, vinegar)
Add water, make sure to cover the pot’s content
Cook for 1hr 30-45mins
When the meat is almost tender, add in corn starch powder (add with a bit of water to liquidate it).
Once the gravy thickens, turn off fire.
So there you go! You can eat it with piping hot rice or buns/bread.
It’s a complete meal on its own with meat & veggies combined together so you don’t really have to cook separate dishes.
