Materials for Tikki:
4 medium potatoes, boiled hives and mashed 1 green chilli, seeds extracted and finely chopped 2 tbspn corn flour (corn starch or Ararat powder) 1 teaspoon lemon salon ketal
Ingredients for Filling:
3 tbsps gram dal 1/2 tsp mango powder 1/4 tsp garam masala powder 1/2 tsp red chilli powder
Ingredients to serve:
1/4 cup green chutney 2 tbsps garlic sauce 1/2 cups date-sweet chutney (sweet sauce) 1/2 cups sav 1/2 cup finely chopped onion 1/2 cup yogurt, fattened lal chilli powder, chaat masala powder for decoration, to decorate
Method of making tikki and stuffing masala:
Soak the gram dal in water for 2 hours. Remove excess water from it and put it in a small or medium-sized pressure cooker. Put salt and 3/4 cups of water in it and let it cook until it gets whistled on medium flame. Chana Dal should not be cooked much. When the pressure of the cooker is over, open its lid. To extract extra water from boiled gram dal, extract it in a sieve. Cooked gram dal should not be too soft. Let it cool for 10 minutes. Take the gram dal, amchoor powder, garam masala powder and red chilli powder boiled in a bowl. Mix them well. Spices are ready for the filling. Take a mashed potato in a large bowl. Add chopped green chilli, corn flour, lemon juice and salt and mix well. Divide the mixture into 12 equal parts. Make each part round the ball like a ball and pressing it between your palms to make a 1/3 inch thick patty. Place 1-2 tsp gram dal masala in between. Cover the fish with all sides and make the spoon again. Again, make a tikki by pressing it. Repeat this process for the remaining parts. Heat a pan on medium flame. Put 1-2 tsp oil in it. Keep 5-6 tikki in the pan and let it cook till the bottom surface becomes golden brown. It will take about 2-3 minutes. Turn them back and put some teaspoon oil around the edge. Allow the bottom surface to become golden brown until it starts to grow. It will take about 2-3 minutes. Remove them in a plate. Bake remaining tikki too. Stuffed potato tikki ready for licking.
Method of making potato tiki licking:
Make all Chattenia according to their recipe. Add some water to the garlic clove and soften. Take 2-3 potato tikki in a plate. Add 1 tsp green chutney, 2 tsp dates-tamarind sauce and 1/2 tsp garlic sauce on top of each tikki. Onion and serve on top of it. Add 2 tsp whipped curd from top. Sprinkle red chili powder and chat masala powder over it. Likewise, make all the plate of tea and serve it immediately.
