Hand made fresh pasta in Bologna 博洛尼亞手工做意大利麵

I love freshly made pasta, they taste so much better than the dried ones. So when I saw pasta being made in this shop in Bologna and had to stop and watch.
我很喜歡吃新鮮意粉,覺得它比一般商店買的乾意粉好吃得多。最近在博洛尼亞看到一家店在示範現場做,馬上停下來看。

When I arrived, there were already a small group of spectators by the shop window. The girl, in fact I'm going to call her PM for pasta maker as I think she deserves a name, had just finished adding her first tray of eggs into the flour, and was starting on the second tray. That's 50 eggs in total!
示範的女生,就叫她做 PM (pasta maker)吧,因為我覺得她很勵害,應該有個名字。我到達店時,她剛加完第一盤雞蛋到麵粉裡,正開始加第二盤。這一共有 50隻!

Here's the pool of eggs in the flour bath. I loved how the dark yellow yolks were floating inside.
你看,一大盤金黃色的蛋黃在麵粉浴缸裡游泳,多有趣!

Slowly, PM gathered the flour from the inside of the bath, stirring gently with her hands.
PM慢慢把麵粉撥到雞蛋裡,然後小心翼翼用手去攪拌。

Then she would flick the flour from the outside into the bath, covering the entire surface with a thin layer of flour. If I didn't tell you, you wouldn't know what's underneath.
之後她把麵粉浴缸外面的麵粉撥到裡面,蓋到蛋上。

The mixing is getting a bit more vigorous as the egg and flour start to mix together. PM starts to use a fork.
這時候,攪拌動作需要大力一點,還要借用叉子的力量。

Finally, the dough is starting to come together, PM can break the flour wall and the egg doesn't leak out.
終於麵粉糰開始成形,麵粉浴缸破了雞蛋也不會流出來。

Now is when the hard work starts. PM is quite petite, probably about the same size as me, but her strength is quite incredible. Despite that, I can tell its still very hard work to knead such a big dough. I later found out it weighs 18kg!!!
這時,辛勞的工作才開始。PM個子比較矮小,但我看她氣力也不小。雖然是這樣,我仍然看的出搓這糰 18公斤的麵糰是很吃力噢!!!

Then she cuts it into two pieces so it's easier for her to knead it properly. Here's one half, you can see the centre needs a bit more work.
下一步,PM把麵糰切割成兩份,這樣比較容易去搓。你看麵糰中間還要花點功夫。

After a while, it seems the dough is ready, and she starts to cut it into smaller ball.
然後再把麵糰切成更小。

Each one is weighed, and it's about 1.5kg. She ends up with 12 balls that's how I know the entire dough weighs 18kg.
每一小麵糰大概有1.5公斤,一共有 12糰。

And lastly, each little dough needs to be knead again before it is finally wrapped in cling film and rested. In this last stage, I even get a smile from PM for one of my photos.
最後,小麵糰會用保鮮膜包起待用。

The final end products, are these lovely tortellini and tagliatelle.
製成品就是這些美味的意大利麵和小雲吞。

This while process took about half an hour and I will always look at hand made pasta with a greater level of appreciation now. Knowing and seeing how your food is made makes it that more special.
我看整個過程大概半個小時,從麵粉和雞蛋到意大利麵,真是覺得這門手藝很了不起。從此,我對手工食物又多一份敬意。

I love handmade pasta but I've never seen it being made from scratch. I've been wanting to give it a try myself (that would make a fun post!)
I love your narrative style in this post and those freshly kneaded pasta dough balls look beautiful! Pasta making is almost like a work of art it seems. :)

Completely agree with you "freshly made pasta" is more tasty than the dried one great you stop and take picture of her making past that's a great contribution to community concerning how making the best pasta (tortellini and tagliatelle freshly eggs-made)

Am seriously considering making my own pasta now ....

Would love to try that, as you said it makes you appreciate it a lot more when you experienced the whole process!
