Pork tangcu travers Sweet and sour short ribs
If you like to eat sweet and salty and especially tart, this dish is for you! It is not like the traditional pork with sweet and sour that is too sweet for my taste, the recipe that I propose today is less sickening, lighter (without added fat) while keeping the greedy side .
As the Chinese New Year approaches (February 16), you can prepare this dish for your guests, it's very simple to make.
This is a new recipe from my mom, she made it to me when I was in Beijing last summer. I put you the recipe she gave me in Chinese, short and very clear for me. 😋
Chew the ribs first, and then a small fire boil, and then stew soy sauce soy sauce onions ginger, put soft candy after stewing, and finally put vinegar, Juice.
For 2 people
500 g pork cut into small pieces
10 g of ginger with the skin
1 scallion
2 tbsp. shaoxing wine (if not sake)
2 tbsp. tablespoon of clear soy sauce
1 C. black soy sauce
25 g of Chinese candy sugar
4 c. black rice vinegar
Preparation
Wash and cut pork bones into pieces (between bones).
Put them in a casserole and cover with cold water, bring to a boil, fry and take out the pork bones.
Discard the cooking water and wash the casserole lightly. Put the meat back in and let it brown at low heat without adding fat (if your meat is fairly lean, add 1 tablespoon of oil in this case). Cook slowly without stirring for 10 to 20 minutes.
When all the pieces are brown, add the shaoxing wine, mix, then the soy sauce, ginger and spring onion, mix again.
Cover the meat with hot water and let it simmer for about an hour with a lid.
After an hour, remove the lid, add salt and increase the heat to the strongest, add sugar and mix.
Watch the level of the sauce well, when the sauce has become syrupy and barely covers the bottom of the casserole, add the vinegar, continue cooking for 30 seconds and stop the fire immediately.
Serve with plain white rice or rice pasta, good tasting!
If you do not have or you can not find the black rice vinegar, do not replace it with other vinegars, because you lose the interest of this dish. By cons, you can achieve another similar dish (here) instead of it.
