UP-Style Lapsi is a traditional sweet dish from the Uttar Pradesh region of India. It is made with broken wheat (dalia), ghee, sugar, and flavored with cardamom and nuts. Here's a recipe to prepare UP-Style Lapsi:
Ingredients:
1 cup broken wheat (dalia)
1/2 cup ghee (clarified butter)
1 cup sugar
4 cups water
1 teaspoon cardamom powder
A handful of mixed nuts (cashews, almonds, raisins), chopped
A pinch of saffron strands (optional)
Instructions:
Heat ghee in a heavy-bottomed pan or kadai over medium heat.
Add broken wheat (dalia) to the pan and roast it in ghee until it turns golden brown and gives a nutty aroma. Stir continuously to avoid burning.
In a separate saucepan, bring water to a boil.
Slowly pour the boiling water into the roasted broken wheat, stirring continuously to avoid lumps.
Be careful as the mixture might splutter. Reduce the heat to low and cover the pan partially.
Cook the mixture on low heat for about 15-20 minutes or until the broken wheat is cooked and the water is absorbed, stirring occasionally.
Add sugar, cardamom powder, and saffron strands (if using). Mix well until the sugar is dissolved.
Continue to cook the lapsi on low heat for another 5-10 minutes until it thickens and reaches a desired consistency.
In a separate small pan, heat a tablespoon of ghee and lightly fry the chopped nuts and raisins until they turn golden brown.
Add the fried nuts and raisins to the cooked lapsi. Mix well.
Remove the pan from heat and let the lapsi rest for a few minutes.
Serve the UP-Style Lapsi warm as a sweet dessert.
