Steemit-ironchef Round 14: Red Rice Asparagus Sushi with homemade 'soy' sauce

This is my second entry to the 14th round of #steemit-ironchef challenge hosted by @progressivechef! I don't normally enter twice but I had so much left over rice, because I can't eat too much of it, it's so filling! I wanted to make Sushi for a while, I'm telling you I haven't eaten sushi in years! and I used to love it so much! not just because i'm vegan but also because I don't eat white rice or soy.
Whilst I was traveling in South East Asia last year, I found a pack of really high quality Nori seaweed, 100% seaweed no extra ingredients, I wouldn't want to consume. Apparently you can tell if seaweed is good quality if the color is dark, and mine looks almost purple so I believe what the packet tells me is true.

Making sushi is so much fun and satisfying, I wanted use a whole range of ingredients, as you can see from my gif what I put inside the seaweed and how it came together. The red rice was sticky enough to use for the sushi but i'm not the best chef because I don't keep my knives very sharp, so it was quite hard to cut the sushi nicely, here was my best shot.

As for the homemade soy sauce, I don't eat store brought varieties even organic ones because i'm not a big fan of some of the ingredients, I discovered this homemade version, just a a moment of inspiration I had in my kitchen about 2 wexeks ago when I was making my celery entry for iron-chef contest. I used black strap molasses, freshly squeezed lemon, apple cider vinegar and a pinch of Himalaya salt. Its quite tangy, it has a soy sauce effect but it's obviously not the same but I prefer it!

Ingredients......

Sushi

Nori Seaweed
Red rice
Avocado
Asparagus
Red pepper
cucumber
Kale (massage it with oil to soften it and take the bite out of it)

Soy

Black strap molasses
Squeezed lemon
apple cider vinegar
Himalaya salt

The photos look fantastic! I never tried making sushi, as I always go eat it out. It does not seem to be so difficult to do it. I think I might give it a try. Thanks for sharing.

It's really easy, the are tutorials on utube that might outline it a bit better much cheaper this way too and healthier I reckon. Thanks for ur lovely comment

I just learned how to make sushi recently – my partner taught me and a few of our friends how to do it – and I made such a mess of it at first, but after that it was surprisingly simple! Your creations look delicious. 😋

Lol u don't even want to know about my first time making sushi, I didn't out protection between the sushi matt and the nori, it was all sticking to the matt, I put too much rice in it too was hilarious!

I thought about doing some sushi, sushi sandwich or sushi burrito too. But I also had another option. I was undecided whether I would make this or that. When I saw your post I knew I couldn't top this. So my the decision to make some vegan Kubba had been made.

It's been a while since I've eaten red rice. I make do with turmeric rice but I think I will buy some red or brown rice again soon. :D Plus there's asparagus in your recipe! Yum!
