We had a full house with almost all new guests and served up an abundance of plant-based goodness!

SALAD
A mixture of green leaf lettuce, spinach, arugula and cabbage with palmito, carrot, cherry tomatoes, cucumber, peppers, radish and sprouted lentils with a tumeric ginger vinaigrette
ENTREE
Eggplant Manicotti - planks of eggplant wrapped around broccoli mushroom alfredo in a sweet tomato puré, covered with caramelized onions and peppers.
Served with mashed parsnips with a creamy herb sauce, and roasted vegetable medley with cauliflower garlic cheese sauce.
DESSERT
2-layer chocolate peanut butter cream pie with dark chocolate ganache
As always, this entire meal is vegan, gluten-free, soy-free and grain-free
