A bright and sunny sunday morning, and I feel like having a hearty vegan breakfast. Thankfully I had made the batter for this dosai last night.
For those who are not familiar with dosai it is a common sounh indian breakfast made from rice and lentils. Rice and lentils are soaked for a few hours then ground together in a blender and fermented.
This recipe replaces rice with millets which are healthier. I have used pearl millet for this recipe. For those who do not know what is Pearl millet here is a whikipedia page about it.

On to the recipie:
Ingredients:
Pearl Millet (Bajra)flour : 2 cups
Urad dhal :1/2 cup
fenugreek seed (or powder) : 1/2 teaspoon
Salt : 1-2 teaspoon or to taste
Yeast : a pinch (optional)
- Soak Urad dhal (more info on Urad dhal in the notes) and fenugreek seeds together for around 1 hour.
- Grind this together into a fine paste with the addition of 1/2 cup of water.
- Slowly add 2 cups of Pearl millet flour and blend by adding up to 1 cup of water.
- Pour this mixture into a big bowl and add salt and a pinch of yeast and mix everything together. Add yeast only if the weather is really cold and the batter cannot ferment on its own.
- Close the bowl and keep it aside for at least overnight or 8 hours.
- Heat a flat griddle, spread some oil on it and pour dosa batter as shown in the video. Cover it with a lid let it cook for around 1 minute, once u can see it has browned you can remove it.
