Every Sunday the Yeti and I have a fancy breakfast with a wine glass full of orange juice. But instead of the usual pancakes, I thought a little change up would be nice!
Since I was craving pastries and the Yeti was craving gooey...that only left one recipe!
The process is a bit long, but I also bake two batches at once. This makes roughly 32 cinnamon rolls, which leaves us some leftovers for later!
I also tried something new, and replaced some of the sugar with maple syrup, and the coconut oil in the dough with applesauce.

Wow! These look so good. Now I am craving cinnamon rolls! I usually make them for Christmas too, but now I am going to have to make some tomorrow. 32 rolls is a large batch. Do you freeze some for much later or is your house the same as mine, they'll be gone before breakfast tomorrow? LOL

Thank you! I was nervous that they wouldn't properly cook because the goo was halfway up the sides of the pan and boiling! Haha but it worked, praise Jesus!

I was either lacto-ovo veg or vegan for over a decade, but I can't anymore because I have food allergies out the wazoo, so I'm using real butter nowadays, but when I was vegan my favorite was Natural Balance because a) it tasted yum and b) it was the healthiest replacement for butter. What do you use? I ask, because my favorite cinnamon roll recipe uses a whole pound of butter (as my FB friend once said when I posted that in shock, "Saint Julia Child Approves"), so it's rather important to a good cinnamon roll! LOL

So, I try to stay away from any replacers that are processed. On occasion we might eat a veggie burger, but we try to stick to whole foods...but of course we enjoy treats! One of my biggest challenges was the cinnamon rolls...which I still haven't figured out how to make sugar free, but the butter was surprisingly easy. Normally I substituted it all with unrefined virgin coconut oil. It didn't leave any coconut flavor, which impressed me! But I'm trying to cut back on oils, so in the dough, when I would've cut in the oil/butter, I used applesauce. For the filling, I had already substituted pure maple syrup for some of the brown sugar, so the extra moisture from oil/butter wasn't necessary. But I did lay a thin coating of coconut oil to the dough to help the filling stick before rolling it up. I also greased the pan with it...which it might not have needed.

Ah, interesting. I still use coconut oil (one of the few oils I'm NOT allergic to), and have used it to replace butter in small quantities, but not tons. I also use it in place of any "shortening" in recipes.
The cinnamon roll recipe I use is a copycat Cinnabon one, and yeah - some of that butter is for coating the dough (and then you spread regular sugar - though I use turbinado instead of white - and cinnamon), and some you grease the pan with and some you literally are pouring over the rolls in the pan like gravy. 😂 It is really Julia Child-tastic. 😂
I never used brown sugar in them, but that's just white sugar with molasses added back in (and turbinado is just sugar with less molasses taken out), so I can see how maple syrup might work! Applesauce I would not have thought of, though!
For icing I use the Portsmouth icing recipe from the Fannie Farmer Cookbook from like the 20s (the Cinnabon copycat recipe recommended buying a jar of Pillsbury white icing. I was like, I am not making these epic cinnamon rolls from scratch and then putting Pillsbury icing on them! LOL).

Oh my goodness, that made me laugh out loud! I hear you...it feels like it would just ruin it! Haha I have a couple icing recipes that call for unusual things...like sweet potatoes. I haven't tried it but I should!

My mother-in-law makes cinnimon rolls every Christmas. She’s kept the recipe closely guarded, and would never give it to me. They are the best. Last Christmas I told her that I thought I’d been in the family long enough to have earned the recipe. She agreed, and she took me to the kitchen and showed me 2 empty bags. Rhodes frozen cinnimon rolls. She buys frozen cinimmon rolls!
She’s going to have to find something else to bribe me into going to her house first thing on Christmas morning, cuz I’m makin’ my own cinnimon rolls now! lol
