Uh, huh, honey!! The good food, Vegan Chakra Coconut Ice. When I saw @deliciousplants post a competition with vegan rainbow food as the criteria, I immediately thought of the Chakra colors - So beautiful. I decided to use Raspberries, Mango, Passion Fruit, Kiwi Berries, Blueberries, Blackberries!

Who else has a sweet tooth? My sweet tooth has a sweet tooth, that's how out of control I am! Coconut Ice is one of my favorites but it's full of sugar, so what do you mean we can actually replace crack with a healthy alternative? ;) Don't get me wrong, it still has sugar hahaha.

So, the recipe below is actually for a recipe that uses beetroot for the original pink coconut ice look, I just divided it up and mixed in a little of each fruit for the colors & added more coconut to balance out the wetness of the fruit. It's a recipe from a book called revive. The coconut Ice recipe with the fruit is my own. You can use whatever fruit you like. My favorites were the mango, passion fruit, and the kiwi berries. I made up the coconut base without fruit, left half to the side, and used the other half to add fruit in batches to put on the top. I feel like some home made vegan condensed milk would go really nicely with it too.

What you need

  • Some kind of food processor
  • 4 cups of desiccated coconut
  • 1/2 cup brown rice syrup
  • 1 tablespoon vanilla essence
  • 1/8 teaspoon salt
  • 1 tablespoon of grated beetroot

Directions

Put all ingredients except beetroot in to a food processor, and process til it's a crumbly mixture. Press half the mixture in to a 10x20cm tin. Add beetroot to the remaining mixture & process. Spoon the pink mixture on to the top of white layer and press down firmly packing it in. Refrigerate for at least one hour. Cut in to cubes to eat. or divide it with preferred fruit & you'll get this...

oh my gosh YES!
Someone finally came up with a healthy alternative to coconut ice, been searching for the alternative to fudge there is one out there.
Can now add coconut ice to the recipe list.
This would be great in the kids lunch boxes.
