Bean Onion Pepper Tofu Stir Fry with Rice and Broccoli 🍚🍲🥦 | Healthy High-Protein Vegan Dinner

Hi Steemit fam! I hope you are all doing well. Today I'm going to share with you a recipe for this delicious meal I made yesterday. It was super simple to make, very nutritious and high in protein. Plus it also included many of my favourite ingredients like rice, beans and tofu.


A little fun fact – broccoli is actually my favourite vegetables! I hear many people saying how they hate the taste of it but I love it! I seriously cannot imagine how someone doesn’t like it. It tastes sooo good to me. Okay I’m being a little dramatic here. But of course, everyone has different flavours and likes different foods, all respect to that.

Since like a year ago I always hated peppers. I never liked the taste of them. I tried them many different ways but hated every single one of them. Then my taste buds somehow changed and I now love it. I never imagined I would love vegetables as much as I do at the moment. I think it's more just society saying how bad the vegetables taste and since you listen to that your entire life you start to believe it. But once you open your eyes and see the other side of the world everything changes. Suddenly you start loving things (or tastes in this case) you once hated. And when you look at the nutritious side of vegetables and combine everything together it's kind of a miracle.

But however lets get back to the recipe. I started by taking one of my favourite grains – rice. Then cooked some broccoli and last but not least made a stir fry with onions, peppers, tofu and beans. As you probably already know by now if you follow my blog - I love stir fries. They are so delicious and you can make them taste however you like. There's absolutely no limits. You can create your own masterpiece. And that’s why I love cooking so much. It’s such a unique way of expressing yourself and everyone has its own style which is incredible. Always remember to be creative and be yourself!


Ingredients:

• 80 g rice
• 1 small onion
• ½ bell pepper
• 100 g tofu
• 150 g white beans
• 1 tbsp hummus
• 1 tbsp ketchup
• 2 cups broccoli

Method:

  1. Start by cooking rice.
  2. In a separate pan caramelize onion. Then add tofu and bell pepper. When the tofu is nicely crispy, add beans, mix around. Then add hummus and ketchup to form a sauce. You can add a splash of water if necessary.
  3. Cook or steam broccoli.
  4. Serve everything on a plate and enjoy!

This looks tasty! It's fascinating how our taste changes over time. I used to hate broccoli, especially cooked broccoli. Now, I love broccoli and actually crave it with tofu.

I think this is my body acknowledging how healthy broccoli is, and it's craving all the nutrition that comes along with eating it. This happened to me with bananas as well! I used to hate them but started incorporating them for health benefits, and now I CRAVE them!

Thank you so much! It's crazy how our taste changes isn't it? The same thing that happened to you with broccoli happened with peppers to me. I used to hate them, now I love them. Our body sure knows what we are putting into it and sends us signals even tho we sometimes just ignore them. It's a miracle what whole food can do!
