I started by taking some potatoes since they take the longest to bake. I then moved onto tofu and stir fry. I find this to be perfect for when I don’t feel like spending a lot of time cooking since I can just throw it in the oven and let it bake.
Recipe:
• 2 potatoes
• 100 g tofu
• 1 tbsp soy sauce
• vegetables of choice (I used broccoli, red bell pepper, peas and green beans)
• beans
• 2 tbsp hummus
• 2 tbsp ketchup
• lettuce
Method:
- Start by washing, pealing and chopping your potatoes. Lay them on a baking tray and put it into the oven which you’ve preheated before on 180oC.
- Take vegetables of your choice (I used beans as well) and put them in a pan. Add a splash of water if necessary and fry them until they look ready.
- In the meantime, chop tofu, add soy sauce and put it onto the same tray you’re baking your potatoes on (less dishes to do hehe) and put it back into the oven.
- When your vegetables are done, add hummus and ketchup and stir until well combined.
- When potatoes and tofu are baked, take them out of the oven and serve on a plate with vegetables and some lettuce for freshness.

You really should!! It turns out super crispy - I find it to be the best way to get perfect texture which is very important to me :)
