Breakfast from Zero to Taco

So my life has been taking dramatic changes -seems like everyday it's something new and out of my control- and the new addition today is that my boyfriend's parents are staying in L.A. for sometime -we've moved in with them- and his older brother has come back to their childhood home so it's now the three of us. I woke up to his brother moving his stuff into the house, so I popped up helped all I could and made us all breakfast at noon!20170903_133430.jpg
My ingredients were:
1 can of vegetarian refried beans
about half a container of soyrizo
vegan cream cheese
and a box of pre-made taco shells

This is what we had handy since most of our stuff is in boxes and we haven't gone grocery shopping since we've moved in.

The cooking process:
I like to have most of my ingredients in their own pots or pans that way I can season them differently-or if anything goes wrong it doesn't ruin the whole meal. So, I put my beans in a pot on one burner that is set to medium heat. In a skillet I have my soyrizo with that burner also set to medium heat. With both the beans and soyrizo I take my time stirring them as well as taste testing the beans; I'll know the soyrizo is done because it becomes a few shades darker and seems a bit more crispy than the original texture. I also set my oven at 425 degrees Fahrenheit and place six taco shells upside down -so they look like upside down V's- and I'll put them in for about four minutes so they're crispy. Once my beans are warmed up, I mix in some vegan cream cheese(however much I and others like cheese) and begin putting in my seasonings. I use similar seasonings for both the soyrizo and refried beans.

Seasonings:
Ground Ginger -Soyrizo
Cumin -Beans and Soyrizo
Ghost Pepper Flakes -Beans
Salt -Beans and Soyrizo
Smokey Paprika -Beans and Soyrizo

I usually eyeball how much of each seasoning I pour in. This is both good and not so good; the good part is you will get a better feel for how much of each seasoning that you or others like and the not so good part is someone may really not like how much of a certain seasoning is put in it. But an easy answer I'd give to someone who isn't a fan of the seasoning is try more cream cheese on top!

After the shells are out of the oven everything is warm and ready to be put together :^)
