Morning Steemitians

Woke up this morning and going camping for one night later. Wanted something easy and quick to make for breakfast before loading my car ready for camping.

This Avocado Toast with Citrus and fennel was so refreshing, so thought would share it with you guys.

Avocados, tart-sweet citrus sections, and very finely sliced fennel come together on this light and revitalizing open-faced sandwich.

Oranges are included in this dish, however grapefruit, tangerines, clementines, or pomelos would be exceptional options. Mint includes a light, organic surface, however arugula and feta cheese would make a punchier, if you so desire and are not a vegan like me.

Yield: Serves 1
Active time: 5 minutes
Overall time:5 minutes

1 piece of Vegan sandwich bread, around 1/2 inch thick
Extra-virgin olive oil
1/2 medium pitted and peeled Hass avocado
4 to 5 thin pieces of fennel from 1 peeled and cored bulb, or enough to cover bread in one layer
5 to 6 sections of orange, cut into sections, from 1 medium orange
Carefully sliced mint leaves, for garnish
Kosher salt and newly ground black pepper

Very carefully brush the bread with olive oil and toast to your own desire. Now just top with the avocado and mash it with a fork until you have covered the entire surface of the bread. Now add a couple of fennel pieces and top with citrus sections.

Just sprinkle with the chopped mint, a little salt and pepper.

Serve and enjoy!

You have my head spinning for ways to try this, I can't have bread but maybe a nice sourdough would work with this one :)
Looks delicious! Thanks for sharing, I love the vegan recipe collection happening here, it's amazing! I am new but I hope to share and inspire recipes as well- people think we're limited in our foods, but it's so wrong isn't it?
PS, I think a vegan 'cheeze' would be amazing on this!

Thanks for your comment! I think a sourdough would work just fine and don't see why not to add vegan cheese as well.. Im sure you can make up many of your own versions of it.

Certainly don't think us vegans are limited in our foods, that why I like to exsperiment! Enjoy :)
