Hi sweet friends! Have you tried making your own summer rolls yet? If not, now the time has come! Suprise surprise, making summer rolls is a lot easier than you think. All you need is rice paper (can be found in Asian stores, cost about 1 or 2 euro), rice noodles (also super cheap), and veggies of choice! Traditionally, in Vietnam, summer rolls are served as lunch (like people eat toast for lunch in western countries), and often contains pork and/or shrimps. But why eat dead animals when you can eat happier food? I used jackfruit for my summer rolls today, and really loved it a lot! To be totally honest with you, this was the very first time for me preparing jackfruit and making summer rolls, and I am so happy it turned out so well, even if the summer rolls where quite difficult to roll, but I suppose I just need some more practice!
For the dipping, I made a peanut butter sauce made with peanut butter, soy sauce, apple vinegar, pressed garlic and some water. There are many great dips out there for summer rolls, just check out some different for inspiration, I put together the ingredients I had at home for my dip, but the next time I will add some rice vinegar and chili to it, and some hoisin sauce!

I sliced the canned jackfruit and then fried them in olive oil until golden on both sides, I added some curry, paprika, Indian spices, sea salt and freshly grounded pepper to the pieces while I had them in the pan. It needed only a few minutes to get ready, and tasted super delicious and a little spicy! As jackfruit hasn't much taste on it own, you have to add taste to it to get the most out of it! (But I actually also like them raw!)
The veggies: lettuce, cucumber, tomato, avocado, coriander (didn't find fresh mint, otherwise I would also have added mint to the rolls), red onion, chives. (Choose the veggies and herbs you like! You can even add fruits or berries°)

The rice noodles are simple to prepare, you just need to cover the rice noodles with hot water for 2-5 minutes and then rinse and drain.
How to roll the summer rolls:
First you need to dip the rice paper in hot water (just dip!), lay it on the table, and place a lettuce, cucumber stick, noodles, 3-4 pieces on jackfruit, the herbs, and a little avocado or red onion if you wish to, roll tightly, fold in the sides, and roll it carefully until you have it all covered. Dont place too much on each rice paper, it is easier if you only have a little to start with. And be sure you save some space on the sides and at the end. Here a youtube video how to fold it!

Lovely as always my friend! I have only tried to make summer rolls once but got a little frustrated with how sticky they were, haha! I am impressed by how beautiful yours turned out! Perhaps I will give them a try again soon. I do love the idea of putting jackfruit in them!
