Researchers from Australia and the UK have discovered in green leafy vegetables a previously unknown ferment - sugar sulphonohydose.
According to them, this ferment treats "beneficial" bacteria in the intestines, which do not allow the "harmful" bacteria to settle there.

Especially, this ferment is contained in spinach and other similar plants. So such foods should be mandatory for the table - depending on the season, of course. In addition, experts hope that the find will help them develop a new class of antibiotics.

At the same time, another study showed that green leafy vegetables protect against cognitive impairment. In the course of a study, it was found that in adult volunteers who ate a lot of green leafy vegetables, cognitive functions were upset at least. For those of the volunteers who consumed 1-2 portions of this type of vegetable, cognitive abilities turned out to be at the level of a person 11 years younger than those who avoided this type of food.

Also, trying to eat many colored veggies is important as they have different nutrients. Fermenting is also good like you said.
