Thailand Doi Pangkhon, Ata Farm - Kenya-style washed

This is one of a trio of coffees, each from the same harvest, but each using a different process to remove the fruit from the seed (or coffee bean). The farmers of Ata Farm as well as the millers at Beanspire have done a great job growing and processing 3 very high quality and flavorful coffees.

This coffee was processed using a ”Kenya-style washed" process. One of only a few groups in Thailand to employ a Kenya-style washed, double fermentation: all coffee is hand picked, de-pulped, dry fermented for 12 hours, wet fermented for 18 hours, washed with mountain water, then sun dried on raised bamboo beds
