Sometimes for fun it's great to limit and challenge yourself by limiting your gear. I once shot an entire wedding with a 50mm 1.4 for a friend. Partly for the challenge and partly for not wanting to carry so much gear over seas.
Well in terms of my favorite camera - I only have the 5d Mark iii. Hoping to upgrade to version iv, lusting over what Sony is doing - but I'm stuck in the Canon ecosphere as I also have a Canon Cinema camera for video.
In terms of the lens it's hard to say. I'd say the 70-200mm 2.8 as it's a fun lens to use and I don't use it often as it's very heavy. I do like shooting the ultra wide 16-35mm f4 as it's a bit challenging to make images "look nice" with it.
Not that I'm thinking about it - I'm also lusting after the Zeiss Otus but it's a $5,000 lens. I can rent it - but I'm afraid to. Check out this review:

Drool. That looks like a beautiful lens. As for kit, I’m fairly limited right now due to being broke. However, for almost everything I do, I find my 7D II paired up with my 400mm f/5.6. I mean everything. Landscape, portraits, and wildlife. It’s just an incredible combo in my mind.

Hey whatever works for you. You can also consider buying used gear as well. We'll never have everything we want but as I mentioned earlier if you're going to buy 1 lens make it the 24-70mm f2.8. It's not a sexy lens - but it's a workhorse.
