Our company too offers many wedding services, including entertainment (DJ and MC). And, like you have said in this very well and insightfully written post, state - we too spend much time in the pre production aspect (creating what we call a "Wedding Day Screenplay", what you call an itenerary) for clients ceremony and reception.
