........ says Ben. "Do mean that after all these years you are telling me this now? I thought you liked my non-iced cakes?

My mind flashed back a lot of years to our wedding day, to the moment the cake was brought wheeled into the reception. It was so memorable that my siblings and in-laws have never let me forget it.

It is a story that has been re-told over the years at family gatherings, my grown up children know the story.

The beautiful big round fruit cake sat proudly on a silver cake tray without any icing. Yes, it was a 'naked' cake, unheard of all those years ago. Wedding cake with marzipan and icing were the social norm. I don't like icing, I just like the fruit cake. A good reason not to have icing was my logic.

Today, difference is not only accepted but expected with wedding cakes.

But in my day an un-iced wedding cake was shocking, I was just before my time I tell myself.

So when Ben confessed to loving iced fruit cakes it knew it was time to make up for the wedding cake from long ago and all the un-iced fruit cakes ever since.

So off to Coles I went to find a block of white icing that can be rolled out and on to the cake. Thank goodness for a good friend giving me a quick lesson on icing cakes the easy way.

Here is the finished cake, my first try! I can only get better!

Wait till the family find out, I will never live it down.
