Weekly Writing Challenge #3 -- My Favorite Meal(s)

A wise old bird, philosopher/mystic Blaise Pascal once said: “In difficult times carry something beautiful in your heart.”

Of course, in times of crisis, this also extends to something delicious in your stomach, aka comfort food :D

Stress eating, in the age of covid, is a real thing. But, it does not mean it has to be unhealthy or unimaginative. Recently, prepared a meal that was good for mind body and soul, as it brought back memories of Home: Egypt.

As you can see from the picture, above, it's pretty basic: refried beans, spring onions, fried egg, pita bread or naan, sharp cheese and tomato sauce.

Growing up, in Egypt, beans are the poor man's meat, and this protein-rich meal is, typically, had for breakfast to rev you up so you can start your day.

But, since this meal is so easy to prepare, I thought to share another one, also, that I've recently learned how to make which I highly recommend.

This is a recipe that should take your mind —- at least, momentarily —- off the gloom and doom of our global health crisis...

Begin by assembling your ingredients.

I used:

3 chicken breasts
1/2 an onion
flour
butter
rosemary
olive oil
chicken broth

Preheat your oven to 350 degrees.

Cut your chicken breasts in half and brown, over medium heat, in a skillet with butter (around 5 minutes on each side)

Now, lay out your chicken in a large baking tray and add artichokes

Next, mix 2 cups of chicken broth with one of flour and add rosemary.

Sautée chopped onions in frying pan with butter leftover from browned chickens and add flour broth mix

Bring to a boil for two minutes, stirring as the sauce thickens.

Now, evenly distribute sauce over your chicken and artichoke, adding a splash of white wine if you have it, or more broth. Black pepper and garlic might be a good idea, too.

Pop your tray into the oven & find something to do for 45 minutes (besides salivating :)

Presto, your comfort food is ready!

Bon Appetit Serve over rice or pasta —- I won’t tell you how to eat :)
