Today I would like to share with you a recipe for a favourite dish of my husband. It is called plov. It is rice with vegetables and meat. Originally it is Uzbek dish. And they cook it in accordance with their recipe. I guess the real one should be cooked with mutton. Also you need a special pan with thick walls which is called cauldron. My husband said that in America they called it a Dutch oven but in Holland they didn't hear about it.)))))))))) I cook in an ordinary pan. But I have my own recipe and I cook it with chicken. I tried several ways of cooking plov but this one turned out to be the best for us.

Ingredients:

  • 2 chicken breasts
  • 2 glasses of rice (long and steamed)
  • 4 glasses of hot water
  • 2 big carrots
  • 2 onions
  • garlic
  • spices: cumin (jeera), turmeric, salt
  • olive oil

Process of preparation:

First you cut chicken breasts into pieces

Put 5 table spoons of olive oil into pan and fry chicken breasts there

Meanwhile you peel off onions and carrots. Cut onions into small pieces and grate carrots. (in accordance with the original recipe you need to cut carrots into sticks but I prefer this way)

Chicken has already been fried a little bit. Add grated carrots and cut onion into chicken. Steam it there for about 5 - 7 mins. I also add some olive oil. Olive oil will be never too much here.

After you add 4 glasses of boiled water and boil everything for 10 mins on low fire. This broth with chicken and vegetables is called zirvak.

While zirvak is being boiled, wash rice. I wash it in 5 waters. The water shall be transparent in the end. The result also depends on the rice. It should be steamed rice.

When zirvak is ready, add 1 table spoon of salt, pinch of cumin and turmeric. I also have special mix spices for plov (but it is not obligatory. It contains cumin, basil,
Garden savory, barberry, paprika powder, dried tomato powder, dried garlic, saffron)

After you add rice.

Boil it on low fire for 15 mins with closed lid and put into plov 4 - 5 garlic heads.

DON'T STIR plov during the whole process!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Boil it another 15 mins. Then you can stir it.
