Zymurgy is usually the last word in the English dictionary. The art and science of fermentation has been a passion of mine for over 25 years. I make a variety of wines and sparkling wines and once in a while some beer.

I love everything fermentation, I've done a lot of veggies, dairy, bread, kombucha and recently jun. I would love to learn more about winemaking!

Hey, I make my own probiotics as well! However, I have no idea what "jun" is. I especially like a simple salsa I make with tomatoes, green bell peppers, onion, and one jalapeno pepper per quart of salsa. I use a 1.5 teaspoon of sea or Kosher salt per cup of water for the brine.
Wine is much more fun than making probiotics (imo). There is information out there everywhere for how to make it. Not much equipment needed either. That said, I had all the toys : )
I would love to upload a video I made of the "violent" stage of fermentation, but haven't figured out how to do that here yet. The must inside the carboy looks like someone is stirring it because of the yeast frenzy to gobble up fermentable sugars.
