Hello my Dearest Foodies,

When comes to comfort foods for colder months, Chili always makes the top of the list for me, because there is nothing like coming home to a warm bowl of this yummy goodness. What I also discovered, is that adding a butternut squash makes it even more satisfying. So if you have not tried it yet this way, check out my recipe. I made it many times and all my friends and family loved it.

AUTUMN CHILI
Black Bean Chilli with Butter Nut Squash
Vegan-Gluten Free
Author: Lena’s Vegan Living

INGREDIENTS
β€’ Black Beans 2cups soaked overnight, rinsed and cooked for 2 hours in 2 cups of water)
β€’ Butternut squash cut into small cubes 2 cups
β€’ Tomatoes 5 medium size diced
β€’ Red bell pepper 1 diced
β€’ Orange bell pepper 1 diced
β€’ Yellow bell pepper 1 diced
β€’ Organic frozen corn 1cup
β€’ Onion 1 medium size minced
β€’ Garlic 4 cloves minced
β€’ Garlic powder 1 tsp
β€’ Cumin powder 2tbs
β€’ Chilli powder 1tbs
β€’ Dry chilli peppers to taste
β€’ Himalayan pink salt to taste
β€’ Oil 1tbs
β€’ Avocado for garnish
β€’ Cilantro 1 cup only the leaves
β€’ Large frying pan
β€’ Large pot
β€’ Small casserole dish

PROCESS
β€’ Preheat the oven to 375F.
β€’ Place the butternut squash into casserole dish with salt, garlic powder and ΒΌ cup of water.
β€’ Cover with lid and roast for 30 to 40 min until soft.
β€’ In the mean time, sautΓ© onion and garlic until translucent on a hot oil.
β€’ Add peppers and sautΓ© few more minutes.
β€’ Add cumin powder, chili powder and chili pepper flakes.
β€’ Stir thoroughly and sautΓ© for few minutes.
β€’ Add tomatoes, corn and salt and stir thoroughly again.
β€’ Cover with lid, lower the heat and let it simmer for 15 to 20 minutes.
β€’ When ready, mix all in the large pot with the cooked beans, butternut squash and cilantro.

β€’ Serve with corn chips and garnished with avocado and cilantro.

Killer chili recipe Lena! I’ve never thought to use butternut squash in my chili πŸ€” I’ll definitely keep this in my for next time.

I’m so happy it’s chili/soup/stew season at my house too. You’re so right, nothing beats coming home to a warm bowl of homemade chili- except maybe a bowl of homemade chili with a loaf of homemade bread to go with it. Haha

While I love avo I never would've put it to a bean curry. Your colour and food combinations are colourful Lena. Such a delicious dish for cooler weather. And cilantro - yum

Ooops. Here in SA we have the Indian influence (not the Mexian) and everything is curry. I was first introduced to the Chili as a food concept when I was in the States. I still forget that it's classified as a dish. We just "curry" it all!

I haven't tried it with butternut squash yet but it sounds like a great idea! I can imagine that the taste is very soft and the dish is quite filling. Perfect autumn food! ❀ Thank you for the idea my dear!

This year autumn is very disappointing. Since the day we went apple picking, it was hardly any sun. Thank you Katie, I am glad you like the chili, I have to double the ingredients next time. It wasn't enough, lol.

Brrr! I can't complain too much since we've had some nice days here and there. The farmers at the market seem to be having a better time of it since it's cooled down and rained a bit to help out their fall crops.

Chili is always best in big quantities, so I'm with you in that I tend to double up on all the ingredients! It just gets better as it sits for a few days, then it always freezes well if you don't eat it all. Though that hardly ever happens in our household. πŸ˜‹

howdy this fine Saturday night! I haven't seen you around today or tonight so I reckon you're out partying with your friends.

Well, I came over to see what kind of thing you had for us today and it's rather shocking for me to be speechless but this post almost left me that way because it's so stunning.

I mean my God this is the best looking chili I've ever seen! It looks like perfection and the ingredients are amazing. I even know what all of them are like cumin power and Himalayan pink salt!

I just realized this week that the Himalayan pink salt that I've been using in my kitchen is actually from Utah. Who knew? I think chili is one of the best inventions ever. Your recipe sounds great and I've got a couple butternut squash sitting on the counter just looking for somewhere to go!

You must have REDMOND Real Salt , which is equally good as Himalayan Pink salt. I had that one few times before as well, it's just not so easy to find it here where I live. And yes Chili, is really great invention, lol. I am glad you lime it Melinda; thank you so much my Dear πŸ’š

I am far from a vegan, but my family enjoys eating vegan... and much to my surprise vegan chilli is amazing. It became one of my favorite dishes and to be honest with all the beans and other veges, after a few hours in the crockpot with seasoning and spices... I've fed people chilli and they didn't believe there was no meat.... AMAZING STUFF!
