It's Sunday: we cooked PAELLA!

It is a family tradition to eat paella on Sundays, whenever I have time I love to cook it. I use the family recipe that I am going to share with you today.

Each paella has its own personality and none tastes the same as the previous one and each family or cook uses their own recipe and their tricks...

I can not always go fishing, luckily the professionals do and in the market I always find the best fresh fish!

so once we have the seafood...

Get ready!

what we need?

Seafood:
Norway lobster (3 per person)
Prawns (4 per person)
Mussels (6 per person)
Clams (6 per person)
Cuttlefish (1 big)

Vegetables:
Tomatoes (2)
green pepper (2)
onion (1/2)
Garlic (2 heads)

Others:
fumet (the main secret ingredient, is a broth made with rock fish)
Salt
olive oil
Rice

We cut the vegetables and grate the tomato

We start frying the seafood in the paella (this casserole receives the same name as the dish: paella) once it is golden remove it and very slowly add the garlic, when the garlic is golden add the onion when it is browned add the green pepper and the cuttlefish finally the grated tomato.

In another fire we open the mussels and clams to the steam, we will keep the liquid that they release

This part known as "sofregit", is the most important, remember over low heat and giving your time to each ingredient

Once it looks like this, the sofregit is ready!
It is time to add the "fumet" in my house the fumet is made with the remains of the fish that I fish (a delight), it would be the perfect broth for a fish soup.

We made 3 cups of fumet for each cup of rice

We increase the power of fire and once the fumet boils it is time to throw the rice and immediately the rest of things! we leave it to fire quickly between 15 and 20 minutes

It's time to call everyone to the table! the paella is almost ready!

Accompanied with a cava or champagne or wine or cocacola or water or without a drink !! the paella is a spectacular dish

the paella is a unique dish but we always have a good dessert

This is a harvest of seafood. A seafood lovers dream. This looks like it would taste out of this world. I will give this a try someday soon, thinks for the recipe.

Thiѕ budget-friendly ѕuрреr соmbinеѕ twо favourites in оnе diѕh. Tор уоur jасkеt spuds with cheese, tomato, pepperoni and basilpizza-jackets.jpg.
Ingrеdiеntѕ
4 bаking роtаtоеѕ
1 tbsp оlivе оil
½ red onion, finely chopped
1 garlic clove, сruѕhеd
60g расk ѕliсеd рерреrоni, torn
400g can сhорреd tоmаtо
½ ѕmаll расk bаѕil lеаvеѕ, ѕhrеddеd
100g grаtеd mоzzаrеllа
how tо prepare Pizzа baked potato...very ѕimрlе

  1. Hеаt оvеn tо 200C/180C fаn/gаѕ 6. Sсrub the potatoes аnd dry wеll, thеn рriсk several times with a fоrk. Bаkе directly on the oven ѕhеlf fоr 1-1½ hrѕ, until they fееl soft. If уоu аrе short оf timе, prick еасh роtаtо with a fоrk, wrар in a ѕhееt of kitсhеn рареr and miсrоwаvе оn High fоr 8-10 minѕ until ѕоft inѕidе.
  2. Whilе the potatoes сооk, heat thе оil in a ѕmаll pan and sauté the onion fоr 5 minѕ tо soften. Stir in the gаrliс аnd pepperoni, аnd сооk for 1-2 mins, thеn аdd thе chopped tomatoes. Bring tо thе boil, then ѕimmеr fоr 5 minѕ. Sеаѕоn and ѕtir in hаlf thе basil. Sрооn оvеr the split роtаtоеѕ and tор each оnе with a gооd hаndful of cheese аnd thе rеѕt оf thе bаѕil.

Ooooopph that paella looks AMAZING! There's such a wide variety of seafood, and it all looks so fresh! I'd love to try cooking paella one day (risotto is my specialty because i'm Italian 🙈)

@beiker I miss Spain, a lot! I am getting hungry just looking at your deliciously looking photos There are few spanish restourants here in DC, majority owned by Jose Andres. We went to almost 40 hockey games last year (season tickets) and had spanish for dinner 30 out of the 40 games.
