⒈Preparation materials: 5 pounds of fresh tofu, fermented black beans, garlic cloves, chili powder, Sichuan pepper powder, salt, red yeast powder, cooking oil, kimchi container or sealed bag.
⒉Production steps:
① Cut fresh tofu into small pieces of 2cm x 2cm x 5cm.
② Marinated fermented black beans: Mash the fermented black beans and garlic cloves into a paste.
③ Mixing marinade: Mix salt, Sichuan pepper powder, chili powder, and red yeast powder evenly with soybean paste and garlic paste.
④ Pickled Tofu: Place the cut tofu pieces into a kimchi container or sealed bag, ensuring that each piece of tofu is coated with marinade.
⑤ Fermentation: Place the sealed tofu in a warm place, open the container or bag once a day, and release the gas produced by fermentation. The fermentation time is usually 3-5 days, but can be adjusted according to personal taste and temperature. ‌
