關於飲茶的文化 Cantonese 'Yum Cha' Culture

今天茶館 @laodr聊起飲茶的題目,不如就來談談我們廣東人飲茶的文化習俗吧!


背景

廣東人飲茶的文化歷史已有上百年,起初出現的是一些小茶寮,於路邊簡陋搭建而成,為路人提供休息的地方,坐下來喝兩杯清茶。隨年月過去,茶寮慢慢發展成茶樓,不再是於路邊的小檔攤,而是有正式店鋪,裝修美觀整潔,環境舒適的食店,甚至不再只是提供茶水,還有很多種不同的「點心」供應,就是所謂的「一盅兩件」。

雖然名為「飲茶」,但其實它並不是單單的「飲茶吃包」的一個用膳活動。廣東人喜歡藉著飲茶,與家人,朋友一同相聚,有閒話家常,也可以談家國大事,分享大家的日常生活。因此與其說飲茶是吃飯,還不如說它是一個社交活動,讓大家交流,維繫感情。

從前人們只會在早上或中午飲茶,但現今的茶樓飯館也是全天候供應,甚至近年有些更營業至凌晨,所提供的也不只是茶水,也有酒精飲料等。

茶水的種類

飲茶飲茶,顧名思義,最重要的還是茶啊。
廣東人普遍喜歡的口味有普洱茶,因為相信它可以消滯,幫助消化。其他例如香片、水仙等綠茶也很有歡迎。較少人選擇的鐵觀音、烏龍茶其實味道也不錯的。

點心的種類

美食來了!「點心]就是飲茶用膳的餐點,製作精緻,讓人可以一口品嚐一件,吃一件也不會太飽,所以一餐可以品嚐多種點心的美味。

  • 叉燒包
    我最喜歡的點心,濃郁米香的包子,包著廣式烤製的叉燒肉碎餡料

  • 潮州粉果
    外皮包著花生、韮菜碎、豬肉碎、蝦米製成的餡料,配上辣椒油實是一絕!

  • 豉汁蒸鳳爪
    對!是雞爪子!有點可怕吧,但南乳醃過的雞爪子蒸了後是極品啊

  • 蝦餃
    薄皮包著的餡料是新鮮蝦子及碎肉

  • 珍珠雞
    用蕉葉包著碎豬肉、雞肉、咸蛋黃及糯米去蒸,蒸好了香氣四溢的

    豬肉碎混合冬菇蝦子的肉粒,好美味

飲茶小知識

  • 從前因為衛生環境差,飲茶時茶客都會先用開水沖洗碗筷及食具以消毒。時至今天,雖然酒樓方面衛生環境已大有改善,但留下的傳統也承傳下去,所以仍會見到茶客於用膳前會各自清洗碗筷。

  • 如果你曾經跟廣東人飲過茶,有沒有發現大家在幫對方倒茶時,對方都會將食指和中指屈曲敲檯面作回應?這是感謝你的意思。相傳清朝時乾隆皇帝微服出巡時去飲茶,為免惹起附近平民懷疑,暴露身份,便為隨從們倒茶。隨從們因為也不可以開口謝恩,於是便以手指屈曲輕敲檯面以作為磕頭及謝意。


後記

飲茶的觀念於廣東人腦海中根深蒂固,寒暄方式上也有飲茶的影子。很多時候我們見面第一句不是說「你好!」,而是「飲茶未呀(飲過茶了嗎?)」,跟人道別時除了說「再見」也可以說「得閒飲茶(找天一起去飲茶啊)」。

下次你來香港人時可以試試跟人這樣子打招呼啊 :)
