Sticky Rice meat ball/ 糯米珍珠丸子

糯米珍珠丸子是每年年夜饭必备的一道菜,圆圆糯糯的非常有节日气氛,象征着圆满。做法非常简单,最关键的一点是糯米要提前一夜泡好,让糯米充分吸水,才能确保蒸好后能够粘在肉丸上。馅儿最好用7分瘦3分肥的肉,太瘦口感会柴,太肥的又会油腻。

步骤非常简单:

-首先将糯米泡上一夜,若时间来不及,也至少泡3个小时以上。
-将葱姜末,盐, 香油和生粉拌入肉末。可根据自己喜好加入马蹄,虾肉等。
-用筷子沿着一个方向搅拌,静置1小时以上。
-将泡好的糯米捞出沥水。
-将腌制好的肉末捏成肉团,放入糯米里滚几圈,让肉馅均匀沾上糯米。
-将做好的丸子放入蒸锅,大火蒸12-15分钟即可。

小技巧:为了美观,肉馅的调味应尽量不用或少用有颜色的调味品如酱油蚝油等,尽量用盐调味。
