I celebrated my birthday recently by making one of my favourite Italian dessert: Vanilla Semifreddo.
A semifreddo is a semi-frozen ice-cream dessert made from eggs, cream, vanilla and sugar.
Once you have tasted semifreddo, you will no longer want to eat store bought ice-cream. It literally blows it out of the water with creaminess and a wholesome 'non-manufactured' taste.
Here is the recipe:
Ingredients:
- 7 to 10 eggs yolks (use 10 egg yolks if they are small yolks)
- 1 cup of caster sugar
- 1-2 teaspoons of vanilla essence
- 1 x 600mL bottle of cream
- Chocolate or fresh berries for garnish.
Method:
- Separate egg yolks and whites. Place the egg yolks into a glass bowl.
- Add sugar and vanilla essence to the egg yolks and beat until it changes to a lighter colour.
- Then place the glass bowl over a simmering double boiler and whisk the egg custard for 12 mins allowing the steam to cook the egg custard. Do not let the simmering water touch the bowl, just let the steam heat the glass bowl.
- Allow the cooked custard to cool.
- In a separate bowl, whip the cream to stiff peaks.
- Then pour the cooled egg custard into the whipped cream and fold until the two mixtures are completely mixed. Use a folding technique to maintain the texture of the whipped cream.
- Place glad wrap into a loaf tin or into individual ramekins and pour in the Semifreddo mixture.
- Place into the freezer overnight allow it to set.
- When ready to serve, remove from the freezer and allow to sit for 10 mins. Serve with chocolate shavings or fresh berries and icing sugar.
Here I've served mine with chocolate shavings.
