August is Vegan cooking month in the ecoTrain community, and our first week has passed already! It's great to see SO many of you have posted some fantastic recipes and i have already tried one.. baba ganoush.. it was so GOOD! I am pleasantly surprised to see quite a few posts that have some really unusual and enticing recipes that not only look amazing but im sure are very tasty.. I plan to make several of these very soon... that was of course the point of this Vegan cooking month.. to inspire us to eat better and try out some new recipes.

So please do check out the recipes and posts below, and of course do comment on the posts if you try one out. If you haven’t yet posted there is still a few weeks left to do so, and if you have feel free to post again with a different recipe. You can find more info at the end of the post.

ecoTrain Simple Vegan Cooking On A Budget Month : Malabar spinach Mixed Vegetable Curry (ପୋଇ ଘାଣ୍ଟ) - a healthy delight

You can use Malabar spinach from your organic garden, as the main ingredient to prepare a very healthy mixed vegetable curry.

In my last post, I shared how you can prepare Malabar spinach Fry - which is now kid's favorite. Today I am going to share a very simple way of making a mixed vegetable curry that is very delicious as well.

Malabar spinach grows fast, so you can cut some stems from your container garden and utilize them to prepare the dish. It even allows the new stems to come with better leaves, for next use. If you want to have the fry also, just take out the big leaves and keep aside for the fry and follow the process from my previous post.

Dal Bati Churma, Simple but satisfying food : ecoTrain Simple Vegan Cooking On A Budget Month!

Dal Bati Churma, this meal is a combination of 3 recipes together.

Dal - It is a mix of different pulses cooked in spicy gravy. Also known as Panchmel Dal as it is prepared with 5 nutritional lentils namely Moong Dal, Chana Dal, Toor Dal, Masoor Dal, and Urad Dal.


Bati - It is a hard tennis ball sized bread which is hard from outside and soft inside. Made of coarse wheat flour.


Churma - It is a dessert mostly made with Dal Bati to make it a complete meal. It is made by crushing Bati and adding sugar, cardamom, ghee(clarified butter) and dry fruits. To make it vegan I used vegan ghee.

My brother give me jackfruit the other day. I forgot to eat yesterday and today. What I did, I make a jackfruit jam. 😋

Baba ghanoush - my hard relationship with an eggplant: ecoTrain Simple Vegan Cooking On A Budget Month!

I do freeganism, like a lot. Last month I spent less than 10% of my average Polish salary on food. But there are some certain vegetables I just avoid. Reason? I have no idea where I could use these. One of them by now was an eggplant. I wasn't even sure if you can eat it raw (you cannot) or if you eat it peeled or not (not peeled, unless in this recipe). When I looked into one of the dumpsters, this was my view.

Eggplants everywhere! And one bra. I managed to pick the best ones and my quest to befriend those weird purple things begun. A friend of mine suggested vegan eggplant pate perfect to bread and snacks. Few minutes on the Internet and we had the recipe.

You can gather the following vegetables to add : Brinjal (Eggplant),pumpkin, tomato, potato, colocasia root and rich gourd. Chop the Malabar spinach leafy part and stems separately and chop other vegetables as shown below. Keep the size of colocasia root smaller, so that it will easily boil.

Dosa, an authentic Indian vegan meal: ecoTrain Simple Vegan Cooking On A Budget Month

Being a vegan my everyday food is vegan. 5 years back when I was vegetarian I used to eat dairy products. In the vegetarian society in India, the dairy products have so much indulged in cooking that in even authentic vegan recipes dairy products are started to add in a delusion that recipe will become rich.

Here I will talk about DOSA, the staple food of south India which has become special food in north India. In south India, Dosa is an authentic vegan food but when it is treated in north India as a special food some dairy ingredients are started to add in the recipe to make it rich and tastier but still, the authentic vegan recipe of Dosa is more delicious, healthy and economical.

Making of Dosa

Dosa is very simple and easy to prepare with minimum ingredients. It requires only 2-3 ingredients. To make dosa we must plan in one day advance. In south India, Idli, Dosa, Uttapam etc it is prepared every day and the same batter is used for all these recipes so they have batter ready all the time. If we want to prepare it once in a while we have to plan in advance.
