A comforting vegan one-pot recipe you can't go wrong with. It's super delicious, 100% plant-based, protein-rich, unprocessed and low in fat and calories. Ideal weeknight dinner if you ask me.

Feel free to double the recipe and freeze for later. Always nice to have a ready-made homecooked meal for those busy evenings. No more overly processed take-out food for you ;)

Indian-Style Potato Dhal with Toasted Black Sesame Seeds 🍲πŸ₯”πŸŒΏ

Ingredients (serves 2)


Β½ cup onion, chopped
2-3 cloves of garlic, minced
Β½ cup carrot, finely chopped
Β½ cup bell pepper, finely chopped
1.5 cup potato, cubed
1-inch freshly grated ginger, or to taste
Β½ cup uncooked split lentils (we used yellow split lentils)
1 cup tomato, chopped
2 cups water
Optional topping: toasted black sesame seeds

Herb mix


2 tsp ground cumin
ΒΌ tsp ground cinnamon
1 bay leaf
Β½ tsp turmeric powder
Sea salt and black pepper to taste

Directions


  1. Heat cooking over medium heat and saute onion for 3-5 minutes. Stir in garlic, herb mix, ginger and cook for one minute more. Stir regularly.
  2. Then add carrot, bell pepper, potato, tomato, lentils, and water. Cover and cook 20 minutes.
  3. Divide over serving bowls and top with toasted black sesame seeds.
