Kiwi Chia Seed Pudding With Fresh Berries And Coconut Flakes

Good morning my lovely steemit peeps. Who is up for a creamy breakfast porridge (or snack) that's loaded with fiber and good-for-you plant nutrients?

Chia seeds soaked for a few hours or overnight turn into a simple, yet super delicious pudding, similar in consistency to tapioca. Though most people just blend the seeds with a nut milk and a sweetener, I love mine with more flavor. Though you can add any fruit you like, this time I used kiwifruit. So yum.

Though chia seeds have been a trend that took the food world by storm, I'm sure it is one that is going to stay. If you’re not familiar with chia seeds, they’re tiny little seeds that contain a lot of soluble fiber. When mixed with water or any other liquid the fibers form a gel-like substance.

Chia puddings are high in fiber, protein, omega-3 fatty acids, and many other beneficial antioxidants, minerals, and vitamins your body needs to thrive.

And they are super fun and healthy to eat. Though I used almond milk, berries and kiwifruit, they can be made with any fruit or nut milk you like.

Ingredients (serves 2-3)


3 tbsp chia seeds
1 cup unsweetened almond milk
1 tbsp maple syrup or raw honey for non-vegans
½ -1 tsp pure vanilla extract
2 kiwi fruit
2 tbsp coconut flakes
Fresh mixed berries to top

Directions


  1. In a food processor or blender combine the chia seeds, kiwi, unsweetened almond milk, vanilla extract, and the raw honey or maple syrup. Blend until well combined.
  2. Pour the mixture into small bowls or jars with lid or cover with plastic foil. Refrigerate for about 4-5 hours or until pudding has formed. Overnight is best. If the pudding is still too runny for you, add a little bit more chia seeds, mix and refrigerate for 30 minutes to 1 hour more.
  3. When the chia pudding is ready to be served, top with fresh berries, coconut flakes or other toppings/superfoods you like.

Nicely done! I eat chia everyday and often make a porridge with chia, flax, and hemp seeds soaked overnight. These Keto "oats" are a great oatmeal replacement for those of us who limit carb intake. Steem the Dream!

I add chia seeds to my breakfast every day and I like to add them also to every kind of salad :) Honestly, yesterday I made soo similar dessert/breakfast (but I made like two layers) and I wanted to publish it on my account any day now hahaa!

Ahh, I should really consider buying a food processor. But then again, also a blender, slow cooker and what not are still on my list too!

Always happy to spread the healthy food vibe ;) In case you didn't know food and eating is one of my biggest passions in life... cats are the other hehe.... I would invest in a decent high-speed blender then you don't need a food processor and if you have an oven and a dutch oven, you have a slow cooker right there ;)

I like eating for sure! Cooking I like too, but I am not the best haha. I try to sometimes though, or when I am motivated.

What's the difference between a Dutch oven and a normal one? :P

Also I've been living in Berlin for 9 months now so unfortunately no Dutch anything here :(

Dutch oven is a cast iron cooking pot. They use them everywhere not only in Holland ;) Not sure why they call it a dutch oven.

Oh those! We call them 'stoofpot'. Yes in deed. My grandmother makes delicious juicy beef in or. Or as we call it, 'draadjesvlees' one of my favorites!
