Heya fellow steemians. It has been very quiet the past week as I was preparing for and traveling to Europe to meet up with family and friends, and go to steemfest to meet up with you guys! I arrived in Belgium 3 days ago and coming from tropical temperatures to freezing point was just crazy! I didn't expect it to be so cold!

Nonetheless, I'm so happy to be here, even though I already have a cold and cough. Also, I can't wait to meet up with some of you during the weekend! One more day!

Next to being super excited to see friends and family, I'm also stuffing myself with all the food I missed in SE-Asia (Belgium chocolate and fresh berries included). So expect some more recipes with these ingredients shortly!

Ingredients (serves 4)

  • 1/3 cup chia seeds
  • 2 cups unsweetened coconut milk, or any other nut milk of your choice.
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 tbsps maple syrup, agave syrup or raw honey
  • 1 tsp vanilla extract (optional)
  • 2-3 tbsps unsweetened shredded coconut

Instructions (prep time: 5 min, chill time: 1 hour)

  1. Combine chia seeds, coconut milk (or other nut milk), maple syrup (or another sweetener of your choice), and vanilla extract in a jar. Close lid and shake vigorously. You could also add the pudding ingredients to a food processor or blender and pulse a few times until well combined.
  2. Allow to chill and form a pudding for at least 1 hour.
  3. When jellified, serve with berries, mint leaves, toasted coconut flakes and/or other superfoods/toppings of your choice.

Recipe notes

  • If you are not the chunky fruit loving person, mix the berries in the chia seed pudding. Make sure to add a little bit more chia seeds to make sure everything gets jellified.
  • Other optional toppings/superfoods: goji berries, raw cacao nibs, mint or basil leaves, seeds or nuts, etc.
  • While fresh is always best, frozen berries work too. If using frozen berries, blend in pudding rather than using them as a topping. Or use other in-season fruits instead.

Sounds great. Chia seed must be in the air, @meesterboom did a bread yesterday using Chia. Thanks for posting

Def trying his bread too. Love chia seeds and going to stock them up while in Europe. They are rare and very expensive in Cambodia.

Yeek, you have a cold and a cough. I may hide from you ;0)

Enjoy you trip. Hope to see your entry in the Culniary challenge.

This looks amazingly delicious. Just keep up the great work @amy-goodrich and check out what was on my plate today @michelnilles

@amy-goodrich - curious about that chia now - have never been tried it because here it's bird feed but been hearing about it as a better alternative to rice or pasta so - would want to give it a try
btw..one of my virtual friends here @ace108 tipped me you could do this

Sorry for late reply. Steemfest absorbed all my attention the past few days. Chia seeds can not be used as a pasta alternative. Quinoa, amaranth and buckwheat are other great seeds that can be used just as rice or pasta. Chia seeds are packed with omega3 and have some protein too. they can be added to smoothies, breakfast bowls, chia pudding, chia seed jams. They are also often used as an egg subsitute in bread, cakes, veggie burgers, or baked goods. Make sure to keep an eye on my feed as I post a lot of chia seed recipes!

@amy-goodrich, no worries, we all have a life outside posting.
Thank you for giving such a detailed reply. I hope you join the Steemit Culinary Challenge if there's going to be more :) someday.

I sure will. Not sure If I still can join this one though. Still in europe at the moment to meet up with family and friends.
