EASY LUNCH RECIPES: Vegan Parsley Basil Pesto Potato Salad 🌿πŸ₯”

Lunchtime on our side of the world! How are you all doing? Getting excited about the upcoming Holidays? I just got word today that we are invited to take part in a photoshoot of the most exclusive and fancy bar in town tomorrow... Kep Sailing Club.... and we get free dinner and drinks for sunset there tonight!

Let's hope it is a beautiful sunset today.... and I'll take some pics of the two events, of course, to share with all of you. I bet a lot of you could use some nice weather pics during these cold snowy months ;)

Vegan Parsley Basil Pesto Potato Salad


Ingredients (serves 2-3)


For the parsley-basil pesto


1 cup fresh parsley
1 cup fresh basil leaves
1/3-1/2 cup extra virgin olive oil
1/4 cup nutritional yeast
1/2 cup roasted cashew nuts
Sea salt and black pepper to taste

FYI: this makes more than you need. Leftover can be used to make a toast or pasta pesto.. or more potato salad ;)

For the potato salad


3 cups small potatoes, (you can leave the peel on) halved or quartered
1/2-3/4 cup sliced red onion
Salad greens of your choice

Directions


  1. Cook potatoes in lightly salted water until fork tender. When ready drain and allow to cool slightly
  2. While the potatoes are cooking, combine all pesto ingredients in a blender or food processor and blend until paste-like consistency. Set aside.
  3. When the potatoes are cooled down, mix with pesto and red onions.
  4. Add salad greens to a plate or salad bowl and top with potato pesto mix.

I'm so glad that I came across this post! I was looking for a pesto recipe! I am so tired of buying it from the store and it can get a little expensive! Resteemed :)

I actually made a parsley pesto last night by coincidence! I used roasted pine nuts but i like the idea of cashews. Im so used to making basil pesto, its refreshing and fun to switch it up!:)

Day 23 on Juice now... at least 4 litters a day... looks nice a bit fatty no?! But will definitely make this once i finish my juice Feast... IIll have a cooked dinner once a week maybe 2... ( ; Keep the ideas coming! Im still fighting the addiction though self control!

Hehe... quite fatty indeed but our body needs healthy fats to build hormones and provide energy. Big thumbs up... 23 days juice fasting is wow! How many more days are you planning? Good luck and looking forward to your vegan dishes ;)

It sure does, but most of us carry enough fat to last us at least a month if we are not eating or drinking... But im my case i drink so much juice it has Heaps of fats! Even 100 grams of lemon has .3 g of fat. But i do add a Hemp tea spoon every week into my savory vege juice. Its day 24... 90.9 kg to 76.8... around 7 kg was just colon weight and the water that kept it hydrated... about 900g of fat gone and gained .2 of muscle + some bone density and water. I love that i have a whole hospital of equipment to play with. ( ;

Well I would already be happy with a centrifuge, a microscope, and some test kits... but yes I would love a mini lab like that!
