Turmeric Chicken Salad with Spicy Peanut Butter Dressing

If you roam around many healthy food websites or love Indian food, then you've heard turmeric is good for you. But how do you use this yellow spice? Try making a turmeric chicken salad - it's flavorful and super easy to make! Don't forget to add some black pepper to increase its powers!

Never heard of turmeric? That's fine too! Allow me to quickly introduce this amazing spice. Turmeric, often called "The Queen of All Spices," is jam-packed with health promoting, anti-inflammatory bioactive compounds. It works wonders for people struggling with chronic pain, such as joint pain. It cleanses your liver and boosts your brain functions. Furthermore, it has shown some promising results in the treatment of skin issues, depression, cancer, Alzheimer's, multiple sclerosis, among other anti-inflammatory and auto-immune diseases... a try cure for all Ayurvedic and Chinese medicine have been using for centuries.

We add it to smoothies, teas, curries, soups, dressing, sauces, marinades, meat... you get it! It can be added to nearly every dish! Fresh or powdered.

Ingredients

For the turmeric chicken

6 oz skinless boneless chicken breast chopped into small cubes
1 tsp turmeric powder
black pepper to taste

For the salad

1.5 cup red cabbage, chopped
3/4 cup carrots, julienned
2 cups Chinese or napa cabbage, shredded
black pepper to taste
1/3 cup unsalted almonds chopped (raw or roasted)

For the peanut dressing

1/4 cup tomatoes chopped
1 clove of garlic minced
1-2 tsp fresh grated ginger o
1/2 lime or lemon, juice only (use less if using lemon)
2 tbsp peanut butter
1 tbsp extra-virgin olive oil
1/4 cup fresh parsley
1 Thai chili pepper, or more to taste (you can use chili paste too)

Directions

  1. Combine all dressing ingredients in a small blender or food processor. Blend until smooth. Set aside
  2. In a pan or skillet, heat coconut oil (we used extra virgin coconut oil for the added flavor) over high heat. Stir in chicken pieces. Season with turmeric and black pepper. Cook for 5 minutes or until nicely browned. Stir constantly.
  3. Combine all salad ingredients, toss to combine, and drizzle with peanut butter dressing.

Mmmmmmmmm delicious! Your salads always look so good Amy. I try to use turmeric wherever possible... I recently started adding it to omelettes and the taste works very well!

It's like you read my mind as I've been talking recently about making ginger ale, and your recipe looks even better than what I made in the past. Hehe! Hidden mind reading powers it seems! It's super easy to make. You'll see. These days I even add grated turmeric to the bug too! Sometimes I don't even bother grating it and just cut in in small pieces. It all works! And for the soda, you can actually use any kind of juice, tea, liquid you like.
