Good morning fellow steempunks. Getting excited over here. A friend is taking us on a sailing class combined with a photo shoot for their website and promo material. Never sailed before so I think it's going to be a lot of fun!

Hope the oceans doesn't get too rough though as there is a storm incoming in coming few days... β›΅β›΅β›΅

But let's talk food again and come back to the sailing after we had the class πŸ˜‰Who knows we enjoy it that much and take up sailing lessons. It is literally a 5 min walk from our door!

🍝Zucchini Noodles aka Zoodles with Romesco Sauce and Falafel Cakes 🍝

Made this yummy main the other day and absolutely loved it. Ever since I made the romesco sauce, which is basically a roasted bell pepper tomato sauce, I have been hooked and it turned out pretty nice with the zoodles and falafel cakes.

Ingredients

2 zucchini, spiralized

FYI: CLICK HERE to learn more about how to spiralize veggies.

For the romesco sauce

2 medium red bell pepper, quartered
4-5 cloves of garlic, lightly crushed with skin on
3-4 tomatoes, halved
1/4 cup unsalted cashews, roasted
1/2 tsp smoked paprika powder
1 tsp apple cider vinegar
Sea salt and black pepper

For the falafel cakes

1.5 cup cooked chickpeas
β…“ cup parsley
β…“ cup onion, chopped
2 clove of garlic
ΒΌ cup panko
Sea salt and black pepper to taste
2 tsp ground cumin
1 chia egg

Directions

  1. For the romesco sauce, preheat oven to 220C or 430F and roast bell pepper, garlic cloves, and tomatoes in oven until charred. Peel bell pepper, tomatoes and garlic and add to a blender or food processor with all other ingredients. Process until smooth texture.
  2. Meanwhile, make the falafel cakes by combining all ingredients in a blender and pulsing until combined. Do not overprocess. You want to keep some texture in the mixture. Roll small balls out of the mixture and press with the back of a spoon to make small falafel cakes. Heat coconut oil over high heat and fry falafel cakes until golden. Flip and repeat on the other side. When ready, add to a plate lined with paper towel to absorb excess oil.
  3. Spiralize zucchini. Heat cooking oil over medium heat and cook zoodles until softened. This will take a few minutes.
  4. Combine zoodles, sauce and falafel balls.

This looks beautiful, Amy. Keep up the good posts, loving what you do and good to see another vegan on here :)

I'm still working out formatting on posts here, how do you do the emojis and centre text like in where you put 'let's connect'

Thanks :)

Nice to meet another plant-based muncher... to center write

add your text like "let's connect" here
, emojis you just go to a website that does the copy paste emoji and copy-paste. Hope this helps. Have a lovely day!

I think I must have just been complicating it way more than necessary. I'll make sure to include some stellar emojis in my next post ;)

delicious. I've only had zoodles a few times, but they've always been good, and a good romesco sauce goes with pretty much anything you want to add to it

I agree. Just love the roasted bell pepper flavor and zoodles are so good... love them from carrot or sweet potatoes too. Thanks for stopping by!

Yes keep me updated with your travel plans, that would be cool :)

Another amazing recipe! Thank you for sharing, I'm going to have to come back and check this out when I get some cashews! :)

Hehe... hope you find some soon. They are the ideal addition to sauces and smoothies to make them nice and creamy. Have a lovely Sunday!

Thank you! I hope you have a lovely Sunday as well! :)

Wow! You are the queen of vegan recipes! Thank You for sharing!

Aww that's so kind... just passionate about food and cooking ;)

I've never tried vegetable as spaghetti, but it does look good! The sauces you make are superb btw

A must try! They are so good. If you don't have a spiralizer a cheap julienne peeler will do the trick. Thanks for all the support my friend!

I need a julienne as well lol xD but I will get it for sure next year :D. That's because you make great quality content :)

GIRL! Ugh this looks so good, reminding me to get a spiralizer again ASAP!

A spiralizer is a must have ;) Lucky for you the Holidays are here... I would start spreading hints of you liking spiralized veggies but not having a spiralizer and who knows Santa brings you one hehe. Thanks for dropping by!

haha you're right! I NEVER know what to ask for- but i think one would totally come in handy around the van- I like the way you think girl! <3

They are small too.. well at least some of them. If not cheap julienne peeler works too ;)

mm i just read the larger post on your blog- i think this mayhave to be a thing for the new year, LOVE the idea of doing them as stir fry noodles! mmm!

Ever since we discovered zoodles we hardly make regular pasta... though I am making a penne with regular pasta today hehe

Β  Β· Β 7 years agoΒ

Haha well, if it were possible to make penne from zucchini and if anyone could figure out it would be you! Lol I’m waiting... don’t fail me now science!

Hmm that's a hard one.. but I'll try! Had some regular penne yesterday ;)

Looks so yummy! πŸ˜‹

Thanks Monika!
