Rice Balls Stuffed with Mozzarella Cheese aka Rice Arancini Balls.

Rice Balls Stuffed with Mozzarella Cheese - delicious and full of flavour!!!

Making them can be a fun way to spend time with your kids.
Let them do it.
My kids enjoy making these tasty rice-cheesy balls :)

INGREDIENTS:

  • 1 cup of rice (risotto style)
  • 2 eggs
  • 300 gr of mozzarella cheese (you can use less cheese)
  • 1 medium onion
  • 2 tsp Caesar dressing
  • 1 tsp olive oil
  • 2 cups of stock
  • 1/2 cup of bread crumbs
  • marinara sauce
  • salt, pepper
  • oil for frying

Blend the onion until smooth

Grease the frying pot

Simmer the onion on medium heat for 5 minutes

Add rice and continue to simmer for another 3 minutes

Add the stock

Cover and continue cooking it on low for about 25 minutes

Keep checking on it and mix it occasionally.

Once cooked move it to a bowl and allow it to cool down

(you can place it in the fridge to speed up the process)

Add salt, pepper and caesar dressing, combine well

Form balls. Place a small square of cheese in the middle

Add the beaten egg to the bowl and make sure all will get a nice coat of eggs :)

Next, it's time for bread crumbs

Deep fry them

And place them on clean sheet of paper towel

It's a finger food that kids will enjoy a lot!

Serve them with a marinara sauce or any other dipping sauce you like :)
