🔹2 tablespoons couscous, uncooked
🔹1 fresh beetroot
🔹1/2 small apple
🔹2 tbsp reduced-fat Greek natural yoghurt
🔹2 tsp lemon juice
🔹1 wholemeal Mountain Bread wrap
🔹1 cup cos lettuce
Peel and grate the beetroot. Grate the apple and chop the lettuce.
In a small bowl add the couscous and the same amount of boiling water (e.g. for
1/2 cup of couscous add 1/2 cup of water).
Cover with a lid or cling wrap to let the
water absorb.
Toss the apple with the lemon juice. Once the couscous has absorbed the water, fluff with a fork and then toss with the grated beetroot and yoghurt to combine.
Layer the wrap with lettuce and the beetroot couscous mixture.
Top with the apple, roll up and serve.
