Very Low-Carb Keto Bread - Yet Another Experiment

The first bread I tried making about two weeks ago was a little moist. I used almond flour and psyllium husk and I probably used more water than I should have. Or I left it baking for too little time. Anyway, it tasted great!

This new experiment brought me in front of a new flour found in a local store, it's a fiber flour made of bamboo fiber and psyllium husk. So, its carbohydrate content is almost entirely dietary fiber, with little or no impact on blood sugar. This time I used much less water. So, the ingredients were:

  • 60g fiber flour
  • 5g psyllium husk
  • 10g baking powder
  • 2g salt
  • 2 whole eggs and 2 egg whites
  • 40ml water

I mixed the dry ingredients, then added the beaten whole eggs, mixed the combo, then I added the beaten egg whites and the water. I lined a pan white parchment paper and put the dough in the pan, after which I put it in the preheated oven at 180 degrees Celsius for about 1 hour.

After taking it out and let it cool for another hour, I sliced the bread. What I didnt like was the smell of egg as I took it out of the oven. However, the smell disappeared once the bread had cooled. What I like about this bread is its rich texture, the fact that it's dry and the fact that it has a crispy crust. I could have left it for an additional 20 minutes more in the oven for extra dryness. Anyway, if you decide to try this recipe, let me know how it came out!

Okay, I am going to take the plunge and actually try this recipe. I love that it is high fiber, as will my hubby. It will be a fun surprise for him with dinner tomorrow. Wish me luck, I have a good feeling about this one in spite of my epic fails at any 'keto breads' I have tried in the past. :)

It looks good, I would dip it in olive oil and add basil! :)

I like to use coconut flour or as a substitute I dry out some cauliflower heads and use it as crust. An amazing ingredient
