Ulog #120: Smokey 'Kambing' Ribs Burger - Mutton Ribs

One our signatures and highly raved about burger is the 'Smokey Mutton Burger'. We use the shoulder and ribs of the goat and cook it for hours on the bone.

After cooking them, I remove the bones and slice them up into pieces. Next comes portioning which each portion weighs about 90g of a mixture of fatty meat and lean meat. As much as the cooking part is time consuming, the portioning part is likewise time consuming as well. The fatty meat and lean meat are cut up and portion seperately so that when portioning into individual packs each one has a balanced amount of fat and lean meat.

Before serving to the customers, I sear each slice on the griddle to get a char and caramelization on both surfaces of each piece, giving it another layer of flavor as well as a crispy texture.

It's served with toasted wholemeal buns, some lettuce, a smokey barbecue aioli and a slice of American cheese. Every other ingredient are basically easy asides from the star of the show which are the mutton ribs and shoulder meat.

The flavor of this burger is really rich and fatty. You get slices of lean meat and fat all through the burger and it really makes it a hearty and extremely flavorful burger. You really have got to try this at least once in your life... or maybe once a week :D
