Homemade Pasta - Quick, Easy and Cheap!!

I WISH I KNEW EARLIER HOW EASY IT IS TO MAKE PASTA FROM SCRATCH!!

I have a big passion for cooking all sorts of meals, but this pasta recipe is so quick and delicious, I just have to share it with you guys. I hope you try it, it will definitely be worth your while!

Recipe:

PASTA DOUGH

-Ratio: 1 large egg for every 100g of flour (300g will feed 4-5 people and I like to use 00 Italian flour)
-Knead till dough is smooth ( approximately 10-15mins)
-Wrap in glad wrap and rest in fridge for 30mins.
-After dough has rested, flour a flat surface
-Roll out dough to preferred thickness, a pasta dough roller works the best
-Cut the pasta into preferred thickness, coating pasta with flour, form spiral strains with the pasta on a tray, cover with a towel and leave till ready to cook.

COOKING PROCESS

-Start off with boiling water in a Pot ( smaller pots can be used, but pasta will then need to be boiled in batches)
-Add salt for taste, I normally add about 1 tbsp of salt to the water ( Or I just add some Beef or Chicken stock)
-Add the batches of Pasta to the boiling water.
-Pasta will be ready within 3-4mins ( To test if the pasta is ready, you will need to taste it, It should be al dente, or firm to the bite, because the longer pasta cooks, the gummier it gets)
-When the Pasta is finished and in a separate bowl, I normally add some olive oil to the pasta, to keep it from sticking together

That's all to it. Now you have delicious home cooked pasta that can be complimented with any sauce. I enjoy the flavours of a nice Carbonara or a Creamy Tomato and Pesto Pasta.

FOR CARBONARA PASTA

-Pancetta/Bacon (1 Packet)
-Cream (250ml)
-2egg yolks, salt and pepper to taste
-Parmesan Cheese to taste

Cut the Pancetta/ Bacon into little pieces and saute in a pan so that its becomes nice and crispy and the fat renders out nicely. I then add the Pasta and Cream to the pan. Just when the mixture starts to boil, I take it off the heat, add the egg yolks and fold in gently. Add the Pasta to a serving plate, add some delicious Parmesan Cheese to round it off and you are ready to eat.

CREAMY TOMATO AND PESTO PASTA WITH CHICKEN

-1 Can of whole tomatoes
-250ml cream
-3-4 tablespoons of pesto
-1-2 teaspoons of sugar
-Chicken breast cut into cubes, salt and pepper to taste

Grill the chicken in a pan till nice and tender. Add the can of tomatoes to the chicken. I normally add some sugar to the to the dish before I start reducing it, it removes some of the acidity caused by the tomatoes. I let it reduce for up to 10-15mins and add the pasta and cream. I gently fold in the pasta.
Add the Pasta to a serving plate, add some delicious Parmesan Cheese to taste and you are ready to eat.

If you try this once, you will never go back to buying Pasta from the store again. There are endless amounts of different sauces that can be used, so be creative and try new things. It is much cheaper and healthier than store bought Pasta.
