Cook the Danish National Dish with us !

My lovely assistant and I cooked the Danish national Dish last night ... it was voted as such a couple of years ago ... but there are several danish dishes that could qualify though...

Crispy Pork with Potatoes and Parsley Sauce
This is a very filling and quite fatty dish ... good for cold days where a bit of extra comfort is needed .... it is simple but tastes awesome if cooked right ... this is how I cook it !
Ingredients
Slices of pork loin, preferably with quite a lot of fat on them as this will enhance both taste and crispyness ...
Potatoes
Parsley
Whole Milk
stock cube
sauce thickener (cornstarch)
salt
(additionally it is lovely served with mustard on the side too )
Simple hearty meal .... very filling

I steam my potatoes in my steamer , boiling them is great too ... I just love my steamer ...

add corse salt to the porkloin slices and in the oven they go ... 180-200 degrees 30-45 minutes time kind of depends on amount of fat on them (shorter) or water in the meat (longer), the best result is achieved with fatty slices and not too meaty ...

Keep an eye on them so they don't burn ... and pour the fat from them ... and save it for the sauce ... will add flavor and yummieness to your sauce ...

My lovely assistant is stirring the sauce
Whole milk in the pot .... add stockcube (porkflavor I used ... but think it is hard to get outside of Denmark) and I add the starch (Maizena for white sauce in my case )
stir while it thickens up .... add the fat from the porkloin bit by bit to incorporate in the sauce without breaking it ...

when your sauce is nice and thick ... taste it add salt to taste if needed

I hate peeling potatoes ... so I serve with peel then everyone can peel if that is their preference lol

Tip!
Scoop up the sauce using your crispy porkloin slice ... and devour ....mash your potato into the sauce with your fork and indulge ... Make a yummie mess !
