Coconut Chicken Curry || Recipe

I’m not sure if I ever share my curry recipe on my blog in more or less 5 months. But that ends now! Here’s my coconut chicken curry recipe.

My coconut chicken curry recipe is basically a curry creamy, warming with a subtle spiciness.

This is the best simple curry that I know, and it’s a easy recipe for people who haven’t tried to make curry before. It is very simple, little spicy and full of flavour.

So if anyone is looking for warming dinner option made with flavourful herbs and spices, this is can be fairly simple recipe to make.

Starting with diced onion and chopped some garlic, and then fry them until the flavour comes out. Add in the curry powder, cinnamon powder and bay leafs continue with paprika powder, salt, sugar and shredded ginger. Cook them for about 3 minutes.

Next...
Add in the chicken, stir to mix.
And then, Add in also the tomato paste and sour cream, and continue with the coconut milk as well.

And then, let it simmer for about 25 minutes, stir occasionally.

Last, add in some lemon juice and cayenne pepper. let it simmer again for 5-10 minutes more.

Serve them while is hot with some rice.
They normally good with white or brasmati rice, but as I only have mix rice of black, red, brown and white at home, so is good.
(I still prefer the white rice to go with curry though)

****INGREDIENTS

  • 2 Chicken breast
  • 1 1/4 cups Coconut milk
  • 1 cups Plain yogurt
  • 2 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 1 Onion
  • 2 Cloves of Garlic
  • 3 tbsp Curry powder
  • 1 tsp Cinnamon powder
  • 1 tsp Lemon juice
  • 1 tsp Paprika powder
  • 2 tsp Cayenne pepper
  • 1/2 tsp Sugar
  • 1/4 tsp Salt
  • 1 Bay leafs
  • 1/2 tsp of Shredded ginger

****METHODS

  • Heat a skillet, and pour 2 tbsp of olive oil.
  • Diced onion, chopped garlic.
  • Sauté the onion and garlic until the flavour comes out.
  • Add in the curry powder, cinnamon powder, paprika powder, salt, sugar, bay leafs and shredded ginger. Fry them for about 3 minutes.
  • Cubed the chicken breast slightly bigger.
  • Add in the chicken, tomato paste, sour cream, and coconut milk. Let it simmer for about 25 minutes and stir occasionally.
  • Last, add in lemon juice and cayenne pepper, stir and let it simmer again for 5-10 minutes more.
